What type cookie lover am I

1hr run (6.3miles)(22min warm up, 30min TT, 7min cool down)
30 min swim (1200m) Easy swim.
We survived our time trial run.  It was 86 degrees when I parked my car...
behind this horse.  So glad I don't have to carry a 180lb man on my back.
That got me thinking.
If I rode a horse I would be so much faster.
Anyway.Survived is the correct word for the day.  It was hot and my body was not too happy about it.  My pace was slower but I figured it would be.  You can't preform the same in the heat. 
I think I am getting stronger cause I'm still alive.
Winning.
I came home and made the world's flattest chocolate chip cookies.  I should have stuck with my original recipe instead of trying a new one.
I was bummed.
Then I ate 5 one.  They are really good.  Just flat.  I thought they would get really hard but we had 5 some tonight after supper and they were still soft in the middle with a crunchy outer edge.  I think I might be digging these.
I always thought I was a thick chewy cookie girl now I'm not so sure.
I'm so confused.
I especially liked the ones I sprinkled with this little jar of awesome.
Jocelyn took a vacation to New York and brought home this jar of salt from the Chelsea Market for me.  A true friend will buy you salt while on vacation.
This isn't just any salt.  It is cinnamon, chocolate, chipotle salt.  It's perfect lightly sprinkled on chocolate chip cookies.  I can't wait to see what else it would be perfect on.  I know there will be more chocolate cookies in my future.
I mean I need to bake another batch for me Jocelyn.
I spent the rest of the day trying to make sense of my new love for flat, chewy cookies. It was pretty stressful.

TT's, stinky boys and melon

1:07 Bike(18miles)(22min warm up, 30min TT, 15min cool down)    I survived my bike TT, today. I'm not sure how I feel about how today went.  I struggled to push myself.  I had a hard time focusing on the task at hand.  
Ugg, very frustrating.
I was faster but I also rode my tri bike this time which is a faster bike on the flats. 
Hind sight- I should have rode my tri bike for the first TT.  
So, I'm not really sure what I learned today. I felt like this TT spread my pace more evenly and didn't burn out with 5mins left to go. That's a plus.
I'm putting that ride behind me and moving onto running tomorrow.
A running time trial.
Scary.
Not as scary as unpacking my teenage son's duffel bag after a week away at camp.  
Ewwww.
Gross.
Like really gross.
Boys.
Smells like he had fun.
I took the other stinky boys to the barber shop to get cleaned up. I love Barber Shops. The nostalgia and the smell of shaving cream make me smile, plus they really know how to make boys look respectable.
You should have seen what this riff raff looked like before. Don't they look handsome.

In food news.
Arugula tossed with a bit of white wine vinegar, olive oil, salt and pepper then topped with melon are all the rage in this triathletes kitchen.
It is really hitting the spot on these hot days.
So are Popsicles but I think that is a different blog post.

Thursday-35min run (3.8miles), 1600 swim (1000 Time Trial)
Rest week means test week too.  If you Remember I'm allergic to time trials.  I know they are necessary though and I have to say this week I am kinda excited to see if I have improved any.
Kinda.
My swim TT went well but I forgot to write down the results of last months TT (loser)so I have no ides how it compares. 
Bummer.
I felt strong though for the whole 1000yrds.  I'll take that as an improvement.
A route with it's own cooling system is a real gem in the desert.  The sprinklers where arching over the sidewalk waiting for us.
Ahhhhhh sweet relief.
I told ya my new tank was bright.  I love it.  It stayed put while running, kept me cool and it's nice and soft.  All the things I look for in a good running top.  
Besides being neon but that goes without saying.

Why haven't these guys flown home?

Have you been watching the Olympic trials?  So many amazing races and athlete's.  It is so incredible to watch.  
I think you all should know that with The Tour de France starting on Saturday and the Olympics starting the end of July I may not blog again until after August 12th. :-)

Feed me

40min run(4.2miles), 1500swim It's a rest week can't you tell.  
My sweatyness doesn't really shout rest week.  I sweat hearts, I'm a sweatheart.
Not the best lighting but I had a perfect heart shape on my tank.  It took me 40 minutes to make it.
My Garmin is having a hard time picking up my heart rate.  Irritating.  I hate electronic problems.  I hope my electronics guy, aka hubby, can figure it out. 
Fast.


The kiddies were getting cranky and arguing so we had to get out of the house today.  Bradon has been hounding me to take him the Lego store.  Since I think that Lego's are evil and I'm sure they plot how to best injure unsuspecting adults in their free time I was reluctant.  
But today I caved.  
Kids fighting makes me weak.
Oh goody they make cute Lego's for girls.
Their reign of terror continues.
For the record they used their birthday money.
I will not spend a penny on those little toe killers.
I got a new tank to help me cope with the invasion of Lego's.  Ok, maybe that is a little dramatic.
I got it because it was $7, super soft, perfectly long and neon(I know you can't really tell but it's neon).  I think one can't have enough neon running tanks.  They make you faster.  
Don't quote me on that.
I think frozen yogurt makes you faster.  It has too.  It's loaded with all those good for you things like live active cultures an fruity pebbles.  That screams fast. 
We ate it fast.
I know I am in a rest week but I can't seem to stop eating.  I am hungry constantly.  I don't get it.  You would think during the heavy training weeks I would feel ravenous, but not on the easy weeks.
I'm weird. 
This bag was at Costco begging for me to take it home.  Since I'm 100% ravenous 100% of the time it came home with me.  Boy am I glad it did.  
It is a very yummy treat.  I mean it's not all healthy like froyo and fruity pebbles but sometimes you fall off the healthy wagon. 
Darn you Costco.

Simply Great Chicken

Sunday-2:00 run (12.8miles), 2500m swim
It was noticeably hotter and more humid yesterday morning.
But when you have great company it doesn't really matter much.  Misery loves company.
I was stoked that all us ladies were able to hook up yesterday.  Danelle is training for Leadville Trail 100.  That is amazing and pretty hardcore.  She drove a bazillion miles across the valley to run with us.  Checks in the mail, Danelle.  Not sure why she didn't run?
Wait. 
Maybe she did?  
She probably did.  
Anyway it was great catching up with the girls and I'm so grateful for my running buddies.  
I wondered how this run would go after yesterday's long ride and run.  We rode a bit harder this weekend than we probably should have, but sometimes you just feel like putting down the hammer to catch the boys.  
Not that we are competitive or anything. :-)
It turned out to be a great run.  The time flew by and my legs felt pretty darn good the whole way.  I had some trouble keeping my heart rate in the right training zone but that's to be expected when it is hot and humid.  I would slow the place a bit and it would drop down in the right zone.  That gets a bit frustrating especially when you are feeling good and having fun.
I can't complain.  It was a great run.
That run/swim wraped up another 3 weeks of good solid training.  This is a rest week and then we hit it again.  I'm looking forward to it.  Every day, every workout is one step closer to the goal.  
I'm super stoked with how well my workouts are going and how my body is adapting.  Raise a ice cream bar to that!  Right now my biggest issue is time.  Finding the time to hang with the family, sleep, eat, keep in touch with other humans and eat.  Did I mention eating?  It is like the fourth discipline.  
I've taken to grabbing a bowl the size of my toddlers head and just dumping the contents of the refrigerator in it.  This salad is loaded with vegi's but they all sank to the bottom, I swear.  I can't seem to get enough iceberg lettuce in my belly.  It's been hitting to spot lately.  Iceberg gets a bum rap. I don't think it gets the respect it deserves.  So what if it isn't as green as the others?  It is yummy in my tummy.  
I will always respect the berg and its crunchy juicy goodness.
This chicken deserves some respect (and a better photo).  
No, no this chicken deserves a standing ovation.  
Seriously.  
I found this recipe and I had to make it asap.  I could not wrap my brain around just two ingredients coming together to make something good.  It didn't sound right to me so I had to see for myself.
It was really, really good.  
It was really, really fast.  Unless you are horrible at cutting up your own chicken, like me.  Have your butcher do it.  It should be free of charge, you just have to ask.  Or use skinless chicken breast.  
You probably have these ingredints in  your pantry so go whip this up and you'll have drool worthy chicken in no time.
Don't let the elaborate name fool ya, it's easy.
Simply Great Chicken
from the Country Chicken Cookbook

  • 1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up and skin removed
  • 1 envelope Italian salad dressing mix
  • 1/2 cup packed brown sugar
  • In a greased 13-in. x 9-in. baking dish, place chicken in a single layer. Sprinkle with salad dressing mix and sugar. Bake, uncovered, at 350° for 55-60 minutes or until chicken juices run clear.

Next time I would probably use boneless skinless chicken breast as to get dinner on the table even quicker.  Girl doesn't like to wait for yummy chicken.
I used a little under 1/2cup sugar.  I was nervous.  My way was good but I think the full 1/2 cup would be fine as well.

I'm an animal

Saturday-2:57 bike (50.5miles), 20min run (2.2miles)
When you rise before the sun you get treated to a beautiful sunrise.
It is so worth it.  Why can't it rise at 8am? 
Anyway.
 We weren't really trying to catch a nice sunrise but trying to beat the heat.  We really weren't all that successful.
A few mix ups with picking up other riding buddies and Steph's slippery fingers kept us out a bit longer than we needed to be. 
While Steph was picking up her belongings for the 4,234 time I had a snack.  I've been waiting forever for the chocolate Stinger waffles to arrive and Steph found some at Road Runner yesterday. She was so kind to grab me a few.  Wonder how many she dropped before they got into my care. ;-)   
I just set myself up.  You know I'm going to drop everything I touch tomorrow. Chocolate waffles?  Loved them!!
Mmmmmm choooocolate.
Despite the heat and the long workout we still finished with a smile.  I felt great and am ready to tackle the dishes my two hour run tomorrow.  Another great day of training in the bank.  High Five!
Todd and I stole a few hours today to catch a movie and do lunch.
Lucky for us at Studio Movie Grill you can eat while you watch the movie.  
Or enjoy a Blue Moon.  Not sure what is on the screen, it was a commercial.
I can't stay awake past 10pm so a lunch time movie is perfect for me.
Next thing you know I'll be hitting up the early bird special at Denny's and wearing black knee high socks with my sandals.
Yeeeeah Ironman training is turning me into a real animal.
Yawn.....Stretch......night.

A biscuit kissed a scone and look what happened

It was a fun run this morning.  We haven't seen each other much this summer so we had a great time catching up.  
We might have goofed around a bit too.  There possibly was a few cheers preformed.....GOOOOO US!  And maybe we made a few human tunnels to run under but we sure had a good time.  Sometimes that is just what ya need.  A little sweat, a little conversation and a lot of laughs.
Aaaand Biscones.  
Trust me.
You NEED them.
The are a little like a biscuit and a little like a scone and a lot like heaven.
Buttery, flaky, slightly sweet biscones.
I might have to make them again tonight and every night for the rest of my life.
Make them and see for yourself.
Welcome to biscone heaven, please pass the jam.
Buttermilk Biscones
from Back in the Bakery cookbook
Makes 10-12
1 1/2 cups unbleached all-purpose flour
1 1/2 cups cake flour (not self-rising)
1/4 cup granulated sugar
2 tablespoons baking powder
3/4 teaspoon fine sea salt
1/4 teaspoon ground cardamom
1/2 pound (2 sticks) cold unsalted butter, cut into 1/2-inch pieces
1 cup dried fruit, such as sour cherries or currant (I omitted)
1 1/2 cups buttermilk, plus more as needed
1 large egg, beaten for egg wash
1/4 sanding sugar for sprinkling (I used regular)


1. Preheat the oven to 375° and line two baking sheets with parchment paper.

2. In a large mixing bowl, whisk the all-purpose flour with the cake flour, granulated sugar, baking powder, 3/4 teaspoon of the salt and cardamom until combined. Using a pastry cutter or two knives, work in the butter until you have various-size pieces ranging from sandy patches to pea-size chunks and some larger bits as well. Add dried fruit, if using.

3. Gradually pour in the buttermilk and gently fold the mixture until you have a soft dough and there are no bits of flour remaining in the bottom of the bowl. You will see bits of butter in the dough, that's good. It will give you a light and flaky biscone. If the dough seems dry, add a little more buttermilk until it is moist and slightly sticky.

4. Using your hands, gently pat down the dough right in the bowl until it resembles a loaf of bread. Dust the top of dough very lightly with flour. Using a large ice-cream scoop, scoop mounds of the dough onto the prepared baking sheets, arranging them about 1 inch apart. Lightly tap down the tops of the biscones.

5. In a small bowl, lightly beat the egg with a pinch of salt. Brush the tops of the biscones liberally with the egg wash. Sprinkle with sugar. Bake for 20 to 25 minutes, rotating the baking sheets halfway through, until the biscones are lightly golden and fully baked. Serve warm or at room temperature.

-To make them savory omit the sugar and fruit.  After cutting in the butter add 10 slices of applewood-smoked bacon, cooked and roughly chopped, and 1 1/2 cups shredded extra-sharp cheddar.  You know those are next on my list.

I got a bike fit

1:09 bike (18.5miles) After having my bike fit yesterday and testing a different saddle my bike doesn't feel like mine anymore.  I felt a bit out of sorts on the ride but we also made good time for our normal loop so that's good.
I know I will get use to my new fit and once I find a saddle I like things will fall into place but right now my booty is sore from all the changes.  Boo.  
I really, really want to be an Ironman. ;-)
Yesterday Todd and I went down to Tucson to the holy grail of tri stores. I have been ordering my gear from TriSports for years since we didn't have any tri stores here in the valley. They have a great selection and most of my orders arrived in a day or two since they came from Tucson.
We since have gotten some great tri stores here in the valley. Yay, the sport of triathlon is growing.  Love it.

I could have gotten a bike fit here in the valley but TriSports was highly recommended to me by more than one Ironman athlete so I took their advice.
We did some walking, running, stretching.....what?  
I'm here for a bike fit remember.  All of those activities gave Craig (bike fitter extraordinaire) clues about my body so he can best set up my bike for me.
There was lots of measuring, weird lasers, adjusting, riding, and more talking, adjusting, riding.
We adjusted my cleats, my seat height, seat position, and then made some major changes to the front of the bike as far as the handle bar height and such.  For a long event like Ironman it comes down to comfort and I'm willing to give up a tiny bit of the aero position to be more comfortable.
I'm not gonna win Ironman.  Shocking I know.  I want to be comfortable.  Comfort=more fun for me!  I am fully aware that comfort and Ironman don't go together, I'm just trying to minimize the discomfort.
After all the adjustments we took the party outside.

Every bike store in the country needs one of these.  So freaking awesome.
I rode my bike outside for a bit because everything feels much different once you are off the trainer and actually out riding.
It felt different but good.  Right now I am pleased with all that we did.  I know there might be some more tweaks we need to make after a few weeks but I know we are heading in the right direction.
My experience at TriSports was AMAZING!!  The staff there (and we were there forever so I'm sure we met the WHOLE staff) was incredible.   I can't say enough about how friendly and helpful they all were.  This sport is hard and it can be intimidating to get into but the people at TriSports are doing their best to make everyone feel welcome and to make the experience less intimidating as possible.  
Craig helped me with my bike fit and I really had a great time.  He was helpful, kind, super easy to talk to, a good listener and very patient, all the things you should look for in a bike fitter.
If you are ever in Tucson or Tempe(their second store opens on Monday!!!) stop in and check them out.  They have everything you need to get ya to the starting line and help see ya through to the finish. 
Oh and check this out!  You can try out their wetsuits before you buy them.  How cool is that?  Getting the opportunity to try a wetsuit before you buy it is genius.  And they can video you while you swim to check and help correct your swimming form.  Someday I would love to do that.
Then again maybe some things are better not seen.  I'm pretty sure I don't really want to know what I look look like when I swim.

Chuck E. gives me the creeps

Today's run was a flat canal run at an easy pace.  I need a new battery in my heart rate monitor.  It was giving me crazy numbers.
I saw this cute couple this morning out on the canal.  
I tell ya the Phoenix area is definitely not your typical city.  This is not that unusual of a site for around here.
Never a dull moment.
I went Here today for a bike fit.  I had an amazing experience but it will have to wait till tomorrow.  I can't seem to get the pictures to upload and I'm too tired to mess with it.
Yesterday we had the kids party at Chuck E. Cheeses and I'm pretty sure I melted all my brain cells.
Even though it was a quiet at Chucks place, I still left there feeling like every ounce of life has been secretly drained from my body.  It also seems that the extra life they steal from me they place into my children as they are always a bit hyper when we get home.
Micah did not sleep at all last night and I feel that proves my theory that Chuck E. is a bit frightening. 
The kids loved it though so that's all that matter's, right?
Yawn, right.
This morning Chuck apparently decided to steal my bike for a ride.

What? I haven't blogged in days?

Friday-1:10 bike (18.6miles) 
Saturday-2:32 bike (42.3miles), 15min run, 55min swim(2700)
Sunday-1:45 run (11.3miles)
Phew, did you get all that?  It was a busy weekend of sweating.  
I've been spending some quality time with Little Red this last week.  We need to get used to each other again and I need to find the right saddle for me.  I'm testing out some different ones hoping to find one that will get me through 112 miles. No small feat I'm sure.  I am down for the challenge.
This mornings sweatfest.
I moved my workouts around this weekend so I could be home early for Father's day, which left me going solo all weekend.  I miss my peeps but I still had great workouts.
I thought my legs would protest today since I rode long on Saturday and then did a short run, but they felt good. 
There were more of them but I shook them off
and then thought to take a pic.
The only protest today was from the ants that apparently didn't want to share the bush I had stashed my spare water in.  Or they were trying to cart it off before I caught them.  
Nice try little guys.
My weekend of workouts looked like this.  Yes, I ran through those sprinklers.   It was refreshing.

Can you believe I didn't blog for two day's?
Shocking!
It has been a bit crazy round here.  Nothing extraordinary or odd.  Just life.
There was robotics camp.
And the end of camp party where I witnessed a pack of teens deplete the entire chocolate cake in minutes.
Teens scare me.
I also realized I have never shared this cake recipe with you.  It's my favorite.
I will remedy that soon.
There has been some Ding Dong ditching going on in the hood.  Which I highly recommend as it was fun.  Lot's of fun and lot's of running.  Double awesome.
There has been some baking and cooking going down in the kitchen.  Some major successes and one fail.  I have some new recipes coming your way.  My mouth is watering just thinking about it.
I'll spare you the failed one. :-)
My boy came back from camp full of dirt and stories.  He had a great time.

My sweat little girl turned 6 and is pretty sure she is big enough to wear high heels.  Cause she is 6 now, ya know.
Then there was Father's Day.  
My husband is such an amazing father and I feel so blessed to have him helping me raising these crazy kids of ours. 
And although I know I made my father's job super simple by being so amazing as a child, I am so fortunate to have had a pretty amazing dad myself.  
I have two pretty incredible men in my life and for that I am forever grateful.
